MARBLED COOKIES
2 cups powdered sugar
1 tablespoon lemon juice
food coloring
_ bake your favorite sugar cookies [I used this baileys cookie recipe, but regular sugar cookies work as well]
_ sift sugar through a sieve to remove all lumps
_ pour lemon juice through a sieve to remove all pulp
_ stir together sugar and lemon juice
[the true ratio of lemon juice to sugar is hard to measure in such small quantity - add sugar or lemon to get a good consistency that drips of your spoon but is not too liquid]
_ spoon out ⅓ of the mixture and split into two small bowls
_ use food coloring to color the icing to your liking [I used the same blue twice - just played with the intensity]
_ drip some of each of the colored icing onto the white one and use a wooden skewer to swirl it around
_ grab a cookie and carefully dip the surface into the icing
_ give it a second for excess icing to drip off
_ place on a baking reck to dry
_ proceed the same way with the other cookies [add more lemon juice if icing starts to get thicker]
[the icing will naturally get a little darker in color as you go]
