WILD GARLIC SWIRLS
250 g potatoes
300 g flour
good pinch salt
pinch sugar
20 g fresh yeast
100 ml buttermilk
100 g cream cheese
salt
1 egg
_ peel and boil the potatoes
_ while still warm, process into a mouse
_ mix flour, salt and sugar in a bowl
_ mix yeast and buttermilk well
_ add potatoes and yeast-buttermilk to flour and mix well
_ knead into a smooth dough
_ cover the dough
_ wash wild garlic, shake dry, remove stems and chop finely
[if you like, you can chop the wild garlic even finer in a machine]
_ mix wild garlic, salt and cream cheese and season to taste
_ Prepare muffin pan [use muffin cups, or grease the pan well]
_ knead dough vigorously on a floured work surface
_ roll out into a large rectangle [about 30x40 cm]
_ spread wild garlic mixture evenly on top
[leave a finger-width border]
_ roll up from the long side and cut into 12 pieces
[or cut into 12 strips first and roll up individually - often gives a nicer roll]
_ place rolls in muffin tins
_ cover and let rise for about 25 min
_ heat oven to 220°C
_ whisk egg and brush dough thinly
_ bake for approx. 20 min [until golden]
