AVOCADO BASIL DEVILLED EGGS
1                          ripe avocado
1 cup                  basil [loosely packed]
2 tablespoons mustard
1 tablespoons salt
6                          eggs
_ bring a pot with water to a boil
_ poke a small hole into each egg and boil eggs for 10 minutes 
   [if you give them a little spinn the egg yolk will stay centred nicely]
_ drop eggs into an ice bath
   [by doing so the eggs will suck in a little water through the hole and they will be easier to peel afterwards]
_ peel eggs and slice in half
_ place egg yolks, avocado, basil, mustard and salt into a blender
_ blend until smooth and transfer to a piping bag 
   [you can also spoon them into the eggs]
_ pipe into the eggs where the egg yolk used to be
_ decorate with chopped chives or microgreens
