GALAXY CRÊPE
30 g butter [melted]
¼ cup milk
3 eggs
1 teaspoon vanilla
1 cup flour
2 tablespoons sugar [optional]
good pinch salt
¼ cup blueberry juice
¼ cup beetroot juice
¼ cup milk
_ combine butter, milk, eggs, vanilla, flour, sugar and salt in a blender and mix until smooth
_ strain through a fine meshed sieve
_ separate into three bowls
_ add blueberry juice to the first, beetroot juice to the second and milk to the third and stir to combine
[You can use store bought juice or cook blueberries / beetroots until soft, mash them and strain though a sieve.]
[Should be almost as runny as milk - if you use self-made juice it might be thicker - add a little more milk if needed.]
_ heat a non-stick skillet to medium high
_ add 3 spoons full of each colour batter into a small pitcher [something that’s easy to pour out of] - make sure not to stir!!
_ pour a small amount into your skillet and swivel around to coat the whole base
_ leave until crepe is cooked through
[You can turn it around to cook from the other side - but the colours might shift. I prefer to go for a lower heat, slower cooking time and only cook it from one side]
_ proceed the same way with the rest of your batter [You can play around with smaller and bigger amounts of the different batters to get different coloured crepes.]
