BASQUE BURNT CHEESCAKE
500 g cream cheese
¾ cup sugar
2 eggs
¾ cup heavy cream
1 tablespoon lemon juice
1 tablespoon vanilla extract
2 tablespoon flour
½ teaspoon salt
_ preheat oven to 180°C
_ prepare a 6 inch cake pan by lining it with baking paper [easies way is to make it wet and crumple it up]
[use a big blender or tall bowl and hand blender]
_ combine cream cheese, sugar and eggs and blend until mixed well [30-45 sec]
_ add heavy cream, vanilla extract, lemon juice, salt and sifted flour
_ blend until well combined [30-45 sec], don’t overmix
_ pour batter into cake pan and slightly tap onto countertop to release air bubbles
_ bake cake for 1 hour
_ top should look lightly “burned”, if still too light add 5-10 min in the oven [keep an eye on it - colour can turn quickly]
_ remove from oven [should still be wobbly] and leave on the countertop to cool down [will deflate and firm up]
_ cake can be eaten at room temperature but is even nicer after a few hours in the fridge
