SPICED PLUM UPSIDE DOWN CAKE
4-5 fresh plums
1 ½ cups flour
1 cup sugar
1 cup olive oil
3 eggs
2 teaspoons cinnamon
2 teaspoons vanilla extract
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground allspice
½ teaspoon ground ginger powder
½ teaspoon baking powder
pinch salt
_ preheat oven to 180°C
_ grease a cake pan
_ cut plums in half and remove pits
_ blend all dry ingredients
_ add oil and whisk by hand
_ add eggs and vanilla
_ beat well [should be a smooth, fairly thick batter]
_ pour half the batter into the cake pan
_ push the plum halves in a single layer into the batter [cut side up]
_ top up with the remaining batter
_ bake for about 50 minutes [until a toothpick inserted comes out clean]
_ allow the cake to cool for at least 15 minutes
_ flip over and decorate with powdered sugar
