ITALIEN PEAR ALMOND CAKE
½ cup butter
[room temperature]
1/2 cup sugar
2 large eggs
⅓ cup flour
100 g ground almonds
½ teaspoon baking powder
3 small ripe pears
50 g sliced almonds
_ preheat oven to 180°C [375°F]
_ grease a springform pan
[line the bottom with a parchment paper]
_ peel, core and cut pears in half
_ beat butter and sugar together
_ add eggs and beat will
_ fold in flour, ground almonds and baking powder
_ spoon batter into the baking pan
_ arrange pear halves [cut side down] in a circle on top of the cake [press them in slightly]
_ bake for 25 minutes
_ sprinkle with almond slices and bake for another 8-10 minutes
[until a skewer inserted comes out clean]
_ leave to cool to room temperature
