MONSTER EYES
2 egg whites
2 cups powdered sugar
1 teaspoon lemon extract
black food coloring
_ prepare a tray with baking paper [ideally tape paper to the tray]
_ beat egg whites with a mixer at high speed until peaks form
_ gradually add sugar and lemon extract
_ whisk until very smooth
[add a few drops of water if texture is too thick to pipe]
[icing should form peaks that smooth out slowly]
_ transfer icing to a piping bag with a small opening [about 2-3 mm]
_ make little dots on the baking sheet
[different size or regular - depending on what you need]
_ combine 3 tablespoons of icing with black food colouring
_ transfer black icing to a piping bag with a very small opening [1mm]
_ make litte black dots for irises on each of the white ‘eye balls’
_ give it at least 24 hours to dry before carefully removing them from the baking paper
[store in an airtight container until use]
