FROZEN YOGHURT PACKAGES
greek yoghurt
vanilla extract
honey or some other sweetener [optional]
fruit [mango, raspberries, strawberries, passion fruit, …]
rice paper
black sesame seeds or other seeds [optional]
cornstarch
_ combine yoghurt, finely chopped fruit, a splash of vanilla extract and honey to taste in a bowl
[for 5 packages I used about 1 cup yoghurt and half a mango]
_ prepare a shallow dish with a few tablespoons of corn starch, a dish with warm water and a tray that you can place in your freezer [I used a cooky drying rack]
_ dip rice paper in water until it starts to soften
_ place on your work surface and sprinkle with sesame seeds
_ place a few tablespoons of yoghurt mixture on it [really depends on how big you want your packages
_ wrap up in a roll, square or triangle [or whatever shape you fancy] and make sure it’s sealed tight
_ coat with cornstarch
_ place on a tray and put in the freezer [about 1 hour for semi-frozen, over night to freeze completely]
_ take out of the freezer and use a brush to take off most of the cornstarch coating
_ leave out for 10-20 minutes to enjoy semi-frozen
