RED BEET PANCAKES
1 cup flour [whole wheat]
¾ teaspoon baking powder
1 teaspoon salt
1 egg
¾ cup greek yoghurt
1 teaspoon vanilla extract
50 g beets [cooked and peeled]
1 banana [very ripe]
1 tablespoon neutral oil
[pictures show double amount + I substituted some wheat flour with peanut flour]
_ mash beets and bananas [or combine with greek yoghurt and puree in a blender]
_ add all remaining ingredients and whisk until all lumps are gone
[for an extra smooth batter you can strain it through a sieve]
_ heat a non-stick frying pan to medium low heat
_ spoon small amounts of batter into the pan
_ turn pancakes over [as soon as fist small bubbles start to form]
_ fry until both sides are golden
ROTE BETE PFANNKUCHEN
80 g Mehl [Vollkorn]
¾ Teelöffel Backpulver
1 Teelöffel Salz
1 Ei
170 g griechischer Joghurt
1 Teelöffel Vanilleextrakt
50 g Rote Bete [gekocht und geschält]
1 Banane [sehr reif]
1 Esslöffel neutrales Öl
[Die Bilder zeigen die doppelte Menge + ich habe einen Teil des Weizenmehls durch Erdnussmehl ersetzt]
