CHESTNUT CAKE
200g good quality dark chocolate
6 eggs
pinch salt
100g butter [room temperature]
60g sugar
1 cup chestnut meal
_ preheat oven to 180°C
_ butter your bundt cake pan and dust with chestnut meal
_ chop chocolate and gently melt in a water bath or the microwave
_ separate egg whites and yolks
_ whisk egg whites with a pinch of salt until stiff peaks form
_ whisk together butter, sugar and egg yolks
_ slowly mix in melted chocolate and chestnut meal [stir until well combined]
_ first mix in a small amount of egg whites and finally gently fold in the remaining egg whites
_ transfer to the cake pan
_ bake for 40-60 minutes [until an inserted skewer comes out clean]
_ set aside to cool before serving
