SPRUCE TIP ICE CREAM
½ cup spruce tips
1 cup heavy cream
1 cup milk
½ cup sugar
pinch salt
_ forage young and fragrant spruce tips
_ clean and chop them very fine [by hand or in a food processor]
_ combine cream and milk and add in the spruce tips
_ put in an airtight container and leave to infuse over night
_ strain through a fine-meshed sieve
_ add sugar and salt and stir until dissolved
_ [if you have] pour mixture into an ice cream machine
_ [alternatively] add two tablespoons vodka and place in the freezer
