CHOCOLATE POUND CAKE
1 cup                  flour
¾ cup                dark cocoa powder
¾ teaspoon     baking powder
½ teaspoon     salt
1/3 cup              buttermilk [room temperature]
1 teaspoon       instant coffee
1 cup                  butter [room temperature]
1 cup                  granulated sugar 
4                          large eggs [room temperature]
1 teaspoon       vanilla extract
_ preheat oven to 325°F 
_ grease a loaf pan with butter and line with a band of parchment paper [allow ends to hang over for easy removal of the loaf after baking]
_ combine flour, cocoa powder, baking powder and salt [sift through a sieve to remove any lumps]
_ dissolve instant coffee in the buttermilk
_ add butter to a big bowl and whisk until smooth [3-4 minutes]
_ gradually add sugar and beat until light and fluffy
_ add one egg at a time
_ once batter is smooth add vanilla and buttermilk mixture
_ carefully add small batches of the dry ingredients [mix on low speed or by hand until just combined]
_ pour batter into the loaf pan
_ bake for 50-60 minutes 
_ cool for min 15 min or until at room temperature
