SHISO SYRUP
100 g red / purple shiso leaves
100 g water
20 g sugar
1 tablespoon apple cider vinegar
_ wash and trim shiso leaves
_ bring water to a boil toss in shiso leaves
_ reduce heat and simmer until leaves turn from purple to a greenish color [so will the water]
_ drain shiso leaves with a strainer
[squeeze leaves to extract as much liquid as you can]
_ place liquid back into a pot and bring to a simmer
_ add sugar and stir to dissolve
_ turn heat off and add the apple cider vinegar
[this will turn the green liquid bright red]
_ leave to cool to room temperature
_ serve on ice, topped with sparkling water
SHISO SIRUP
100 g rote/violette Shisoblätter
100 g Wasser
20 g Zucker
1 Esslöffel Apfelessig
