CHOCOLATE CRUMBLE CHEESE CAKE
250 g flour
125 g butter [room temperature]
125 g sugar
25 g cocoa powder
1 egg
1/2 package baking powder[16 g]
125 g butter
125 g sugar
3 eggs
1 package vanilla pudding powder
1 package vanilla sugar
1 tablespoon lemon juice
500 g quark
_ butter a 20 cm cake pan
_ for the chocolate crumble combine butter, egg, sugar and cocoa powder in a large bowl
_ whisk with and electric mixer and slowly add flour and baking powder
[you should end up with a moist but crumbly texture]
_ take half the crumbles and place them in the cake pan
_ shape a bottom and ‘cake walls’
[use a glass or measuring cups to press the mixture into the pan]
_ preheat oven to 180°C [350°F]
_ for the cheese cake whisk butter, sugar and egg yolks until light and fluffy
_ add pudding powder, vanilla sugar, lemon juice and quark
_ finally beat the egg whites until stiff and carefully fold into the quark mixture
_ spread over the crumble cake bottom
_ crumble up the remaining crumble mixture and spread on top of the quark mixture
_ bake for about 50 minutes
_ leave to cool completely before cutting and serving
