WALNUT CARROT CAKE
200 g brown sugar
4 eggs
145 g butter [soft]
1 package vanilla sugar
pinch salt
250 g carrots
175 g flour
1 package baking powder
50 g cornstarch
2 teaspoons cinnamon
[optional pinch of clove and nutmeg powder]
150 g ground walnuts
4 tablespoons chopped chocolate
150 g dark chocolate
1 ½ tablespoons coconut oil
_ peel and finely grate the carrots
_ preheat oven to 170°C
_ separate eggs
_ beat egg whites with salt until stiff
_ beat butter, sugar, cinnamon and egg yolks until fluffy
_ carefully fold in chopped chocolate, carrots, walnuts, flour and beaten egg whites
_ grease and flour a baking pan
_ spoon batter into pan and bake for 45-40 minutes [I baked my small ones for 30 minutes]
_ let cool briefly and turn out of the form
_ melt chocolate with coconut oil and pour over the cooled cake

150 g gemahlene Walnüsse
4 Esslöffel gehackt Schokolade
150 g dunkle Schokolade
1 ½ Esslöffel Kokosfett
