STRAWBERRY DOME CAKE
300g strawberries
3 sheet gelatine
350g quark
125g cream cheese
100g mascarpone
40g sugar
1/2 lemon [juice]
chopped
pistachios
vanilla cake
_ prepare a medium large bowl by covering the inside with cling foil
[diameter about 20cm]
_ bake [or buy] a vanilla cake and cut out two disks that fit easily in your bowl
_ wash strawberries and cut them into thin slices
_ place strawberry slices in one tight layer inside your bowl
_ puree the remaining strawberries into a fine mousse
_ soak gelatine sheets in cold water
_ combine quark, cream cheese, mascarpone, strawberry mousse, sugar, lemon juice and vanilla sugar and mix well
_ drain gelatine and slowly heat in a small pot
_ once melted, remove from heat and mix in 2 tablespoons of quark cream
_ transfer gelatine mix to quark cream and combine well
_ pour about ⅓ of your mixture into the strawberry covered bowl
_ place first cake layer inside and add remaining quark mixture
_ top off with second cake layer
[you can make that one large enough to completely cover the dome or like me that there is still some quark on the sides]
_ leave to set for at least 3 to 4 hours in the fridge
_ once ready to serve turn your bowl around and gently pull on your cling foil to free the cake
_ remove foil and sprinkle with chopped pistachios
