brown - for a caramel note]
_ collect and clean young spruce or fir tips
_ sterilise a large glass jar
_ layer sugar and spruce tips [try to avoid air pockets]
_ seal jar and keep in a warm, dark place
_ check daily until spruce tips have turned color and all sugar turned liquid
_ strain through a fine meshed sieve or muslin cloth
_ bottle into sterile jars
