SNICKER DOODLES
1 1/2 cups flour
1 teaspoon baking powder
pinch salt
1/2 cup butter
1/2 cup sugar
1 large egg
2 tablespoons sugar
2 teaspoons ground cinnamon
_ combine flour, baking powder and salt
_ whisk together well
_ cream together butter and sugar [until light and fluffy]
_ add egg [mix well]
_ reduce mixer speed
_ gradually add dry ingredients
_ mix until just combined
_ stir sugar and cinnamon together in a small bowl
_ shape cookie dough into small balls [2-2.5 cm in diameter]
_ roll each ball in cinnamon-sugar
_ place on a baking sheet [give them plenty of space]
_ preheat oven to 180°C
_ bake for about 12-15 min [until edges are golden - rotate pan halfway through]
