SNICKER DOODLE LOAF
1 ½ cups flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
½ cup butter [softened]
1 cup sugar
2 eggs
1 teaspoon vanilla
½ cup greek yoghurt
¾ cup add-ins
[nuts, raisins, dried berries,…]
1 teaspoon brown sugar
½ teaspoon cinnamon
_ grease and flour a loaf pan
_ preheat oven to 180°C
_ whisk together flour, baking powder, salt and cinnamon
_ cream butter and sugar until fluffy
_ mix in one egg at a time
_ mix in vanilla and yoghurt
_ add dry ingredients [stir until well combined]
_ fold in desired additions
_ spoon batter into the loaf pan
[should not be filled more than two-thirds]
_ combine brown sugar and remaining cinnamon
_ top batter with sugar mixture
_ bake for 40 to 50 minutes
_ leave to cool to room temperature before serving
