SHISO FURIKAKE
1/4 cup               shiso leaves
1/3 cup               dried nori
1/3 cup               white sesame seeds
1/3 cup               black sesame seeds
1/3 cup               bonito flakes
                              sea salt
_ dehydrate shiso leaves in a dehydrator at 50°C [or carefully in the oven with the door wedged open] for about 45 min [should be completely dry and brittle]
_ heat a pan without oil and toast sesame seeds 
   [they should get fragrant but not visibly brown]
_ combine shiso, nori, bonito flakes, salt and half of the sesame seeds in a grinder
_ pulse a few times until the flakes and seeds are similar in size
_ transfer to a jar and add the remaining sesame seeds
_ store airtight
[use to sprinkle over poke bowls, ramen or use it to season onigiri]
