RHUBARB BROWNIES
1 cup sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla
1/2 cup flour
1/3 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup rhubarb
1/2 cup dark chocolate chips
1/2 cups walnuts [or pecans]
_ preheat oven to 180°C
_ line a baking dish with parchment paper
_ wash rhubarb and cut into small cubes
_ whisk together sugar, vegetable oil, eggs and vanilla
_ in another bowl combine flour, cocoa powder, baking powder and salt
_ bit by bit whisk the dry ingredients under the wet ingredients [don’t overmix]
_ add rhubarb, chocolate chips and nuts [will be a thick batter]
_ spoon batter into the prepared baking dish [spread out evenly]
_ bake for 20-25 minutes [or until a toothpick inserted into the middle comes out clean]
_ remove from oven and leave to cool for at least 10 minutes

1/2 Teelöffel Backpulver
1/2 Teelöffel Salz
100 g Rhabarber
85 g dunkle Schokolade
60 g Walnüsse [oder Pekannüsse]
