PANDAN EXTRACT
18 pandan leaves
[fresh or frozen]
½ cup water
_ wash leaves and shake dry
_ cut into medium chunks
_ loosely pack into a blender or food processor and add water
_ process until leaves are completely pulverized
_ use a strainer [or cloth] to strain the extract
_ transfer to a steril glass, cover and place in the fridge
_ after 2-3 days the extract will separate
_ discard of the top liquid and use the bottom liquid
[keeps for about 1 week in the fridge]
