ORANGE BUNDT CAKE
3 cups flour
2 teaspoons baking powder
pinch salt
115 g butter
[room temperature]
1 ½ cup sugar
⅓ cup olive oil
3 eggs
1 teaspoon vanilla extract
2 tablespoons fresh orange zest [plus extra for garnish]
½ cup orange juice
[about 2 oranges]
1 cup chocolate chips
_ grease and flour a large bundt pan
_ preheat oven to 190°C
_ whisk together flour, baking powder and salt
_ mix butter and sugar together until light and smooth
_ add olive oil and eggs [on at a time]
_ add orange zest and vanilla
_ slowly add orange juice and dry ingredient mixture
_ finally use a wooden spoon to mix in chocolate chips by hand
_ pour batter into prepared bundt pan
_ bake for 45 to 55 minutes [until inserted skewer comes out clean]
_ let cool a litte before taking it out of the pan
_ serve and sprinkle with orange zest
