HAWTHORN KETCHUP
3 cups hawthorn berries
1/2 cup apple cider vinegar
1/2 cup water
1/4 cup honey
1/4 cup apple cider [or black cherry juice]
1 teaspoon salt
pinch black pepper
pinch cayenne pepper
pinch cardamom
pinch cinnamon
pinch allspice
pinch nutmeg
_ remove berries from their stalks and rinse in cold water
_ place berries, water and vinegar in a large saucepan
_ gently bring to a boil
_ simmer for about 30 min [until the skin starts to split]
_ leave to cool and push mixture through a sieve to remove the pits
_ return mixture to the pan
_ add honey and spices and bring to a low boil [sir frequently]
_ remove from heat and gradually add apple cider until you reach your preferred ketchup consistency [sauce will thicken a bit as it cools]
_ taste and season with more salt and pepper if needed
_ bottle into sterile glasses
_ refrigerate and use within 2 months

Priese Piment
Priese Muskatnuss
