GERMAN MEAT BALLS
1 bread roll [light]
200 ml milk
500 g minced beef
1 medium onion
2 pickles
2 tablespoons capers [optional]
salt
cayenne pepper
2 eggs
2 tablespoons hot mustard
breadcrumbs
[ideally from the baker]
lard
_ soak the roll in hot milk [let it cool down well again]
_ finely chop onion, pickles, [capers] and parsley
_ mix meat with onions, [capers,] parsley, picles, spices, eggs and mustard and knead well
_ squeeze the softened, cold bread roll very well and mix into the mixture
_ work through to end up with a smooth meat dough
_ form small, flattish balls
_ coat with a few breadcrumbs [makes them crispier on the outside]
_ heat lard and fry the meatballs well on both sides
you can serve boiled potatoes and carrots with it or enjoy the meatballs in a bread roll
