CHRISTMAS TREE MERINGUES
3 large egg whites
3/4 cup powdered sugar
1 drop peppermint extract [optional]
green food coloring [gel-paste]
_ combine egg whites and sugar in a metal bowl
_ slowly stir and warm over a water bath until sugar is dissolved
_ remove from heat and whisk on high speed until stiff peaks form [10-15 min]
_ prepare a piping bag with a medium sized, star shaped tip
_ put a large piece of cling wrap flat on the table
_ brush stripes of food coloring onto the cling wrap
_ distribute meringue cream on top
_ roll into a tight sausage and seal tight
_ cut open on one side and drop into a piping bag
_ preheat oven to 80°C [no circulating air]
_ prepare a baking sheet with a baking paper or a silicone mat
_ pipe little trees onto the sheet [how many tiers is up to you and the size of the tip]
_ place inside the oven and dry for about 90 minutes
_ turn off the heat and leave the meringues inside the oven until cooled down
[ideally leave the trees in the oven over night]
