BRAIDED STAR BREAD
450 g     flour [+ some for sprinkling]
200 ml   milk 
2              eggs 
8 g          dry yeast 
30 g        butter [room temperature]
70 g        sugar 
pinch      salt 
200 g     chocolate spread
_ warm milk [until lukewarm] 
_ dissolve yeast in milk [let sit for 15 min] 
_ sift flour through a sieve and add sugar and salt  
_ separate the eggs  
_ add egg yolks and milk to the dry ingredients  
_ mix with a wooden spoon  
_ transfer to a work surface and knead dough for about 7min  
   [add milk if needed - dough should stay a little sticky]  
_ put dough in a bowl and cover with a cloth
   [let rise for 40 min in a warm place]  
_ preheat oven to 180°C  
_ melt chocolate in a water bath  
_ knead the dough for a minute and divide into 4 equal parts  
_ roll each pice into a circle [2-3 mm thick]  
_ place first piece onto a baking paper   
_ take a bake tin to mark a round area  
_ cover this area with a thin layer of chocolate spread  
_ place the second dough circle on it, spread chocolate on top and cover with the third dough circle   
_ use the cake tin as a marker and cut of the excess dough  
_ mark a center ring with a coffee mug  
_ divide cake into quarters 
   [cutting from the marked circle to the outside]  
_ divide every quarter into four equal parts [16 equal parts in total]  
_ twist each part twice   
   [each part into the opposite direction than the last one]  
_ twist the ends in to create an overall round shape  
_ brush the dough surface with egg white  
_ bake for 15-20 min [for the first half only use lower heat]
