CINNAMON BANANA MUFFINS
⅔ cup sugar
¼ cup vegetable oil
2 large bananas
[as ripe as possible]
2 large eggs
1 teaspoon vanilla extract
1 ⅔ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
2 tablespoons sugar
½ teaspoon cinnamon
for the topping
_ preheat oven to 180°C [375°F]
_ prepare 12 muffin cups
_ combine sugar, oil and eggs [whisk with a wire whisk]
_ mash bananas with a fork and add to the mixture
_ finally add flour, baking powder, salt and cinnamon
[stir until just combined]
_ spoon batter into muffin cups [½ to ¾ full]
_ combine extra sugar and cinnamon and sprinkle a thin layer on top of each muffin
_ bake for 15 to 20 minutes [until toothpick comes out clean]
_ remove from heat and leave to cool to room temperature
