MEDITERRANEAN BAKED COD
600g                   cod fillet 
5 cloves             garlic 
¼ cup                 fresh parsley [loosely packed] 
5 tablespoons lemon juice 
5 tablespoons olive oil 
2 tablespoons butter 
⅓ cup                flour
1 teaspoon      ground coriander 
1 teaspoon      sweet paprika powder 
1 teaspoon      ground cumin 
¾ teaspoon     salt 
½ teaspoon     black pepper
 _ melt butter and mix with lemon juice and olive oil
_ combine flour, coriander, paprika powder, cumin, salt and pepper in a shallow bowl  
_ pat fish fillet dry  
_ dip fish first in lemon juice mixture and then flour mixture [dust off excess flour]  
_ preheat oven to 200°C [400°F]  
_ finely chop parsley and mince garlic  
_ heat 2 tablespoons olive oil in a skillet [medium high heat]  
_ sear fish on each side to give some colour [don’t cook the fish through at this stage]  
_ transfer fish to an oven proof dish  
_ mix garlic into the lemon mixture and drizzle over the fish  
_ bake for about 10 minutes [fish should flake easily]  
_ sprinkle with parsley and serve with rice or salad

600 g             Kabeljaufilet 
5 Zehen        Knoblauch 
¼ Tasse        frische Petersilie [lose gepackt] 
5 Esslöffel   Zitronensaft 
5 Esslöffel   Olivenöl 
2 Esslöffel   Butter 
40 g                Mehl 
1 Teelöffel   gemahlener Koriander 
1 Teelöffel   süßes Paprikapulver 
1 Teelöffel   gemahlener Kreuzkümmel 
¾ Teelöffel  Salz
