If you – like me – don’t own an ice cream machine but still don’t want to miss out on sweet and creamy summer refreshments than this is the perfect recipe. You can freeze the mango cubes a while ahead and take them out of the freezer to process once the sun makes you crave some fruity refreshment.
The flavour mixture of mango – coconut- vanilla and maple syrup is surprisingly perfect. Just thinking about it makes me want to run out and get more mangos.

[no ice machine needed]

  • 3 ripe mangos
  • ½ cup canned coconut milk [full-fat]
  • ½ teaspoon vanilla extract
  • 2-4 tablespoons maple syrup
  • pinch salt

_ remove skin and stone from the mangos and cut into small cubes

_ place in the freezer until frozen solid [you can make this a while in advance]

_ take mango chunks out of the freezer

_ place mango together with all other ingredients into a high-powered blender or food processor

_ process until you get a smooth and creamy mixture

_ don’t over process it [some mango pieces in there are actually nice]

_ drizzle with more maple syrup and serve immediately
