Ever wondered what gives rustic, dark bread its characteristic taste. Well, these are some of the base spices. Feel free to experiment with this. Either by changing the ratio of the mentioned spices or by adding new ones. Be creative. There is no right and wrong here. Just go with your gut – or better with your taste buds.
_ heat a pan to medium heat [without oil]
_ add spices until fragrant [take care – this happens really fast]
_ leave spices to cool down
_ use a mortar or an electric blender to grind the spices into a fine powder
_ store the powder in an air tight jar
[for a 1 kg bread you’ll need about 1 tablespoon spice powder – but that’s up to you]
