ZWETSCHGENRÖSTER

September 7, 2014

When my siblings and I were born our parents planted a tree for each one of us. A cherry tree for my sister, a pear tree for my brother and a plum tree for me. My tree grew nice and strong but the growing fruit part didn’t work out so well. It grew about 10 plums a year – and they committed suicide just before getting ripe enough to eat. Last year my father decided to cut it in half lengthwise. This seems to have shocked the tree into producing fruits like crazy this year. So for the first time ever – plum recipes with my very own plums.

ZWETSCHGENRÖSTER / PLUM MOUSE

  • 1kg ripe,sweet plums
  • 150g sugar
  • 1 teaspoon cinnamon powder
  • 0.5 teaspoons ground cloves

fox_plum_mousse

_ cut plums in half [quarter really large ones]

_ take out the stones

_ put sugar in a large pot [high – because it’s gonna sputter and with a wide bottom]

_ carefully heat until sugar is melted [about 10 minutes]

_ sugar should turn golden [but not too brown]

_ add plums [take care – sugar is super hot and will sputter]

[sugar will get hart – but will melt again once the plums get hot]

_ add cinnamon and ground cloves

_ bring to a boil [for about 10 minutes]

_ season with more spices if needed

now you have to decide if you like your mouse with plum pieces in it or not. both is yummy. just go with your gut.

_ if you go for a creamy mouse without junks puree the plums

_ if you want to keep it for a long time bring to a boil once more [for 10 more minutes]

_ put into sterilized jars and turn up side down

_ keep in a cool dark place
