Another yummy bread recipe. Filled with cheese and/or bacon it’s fun to pluck out pieces after piece. It’s best eaten warm, but give it some time to cool – the cheese inside gets really boiling.

  • 3 tablespoons water [lukewarm]
  • 1 package dry yeast
  • pinch sugar
  • 5 tablespoons butter
  • 1 cup milk
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1 large egg
  • 3.5 cups flour
  • mozzarella cheese
  • bacon [optional]
  • 0.3 cups olive oil
  • 0.25 cups rosemary [coarsely chopped]
  • 3 cloves garlic [minced]
  • 0.5 teaspoon salt
  • good pinch pepper

fox_zombie_bread2_ put water in a bowl and stir in yeast and sugar [let stand until bubbly – 5min]

_ melt butter and remove from heat

_ add milk, honey and salt

_ mix in egg

_ add mixture to the yeast along with 2cups flour

_ knead until well combined

_ add remaining flour [half a cup at a time] until a smooth but sticky dough forms

_ transfer to a greased bowl and coat with oil

_ let rise until double in size [1-2hours]

_ combine olive oil, rosemary, garlic, pepper and salt in a bowl

_ brush the inside of a baking pan with a bit of the oil mixture

_ divide the dough into about 36 pieces [roughly the same size]

_ shape the dough pieces into small balls, filling them with cheese [and bacon]

_ coat the balls with the oil mixture and place them in the pan

_ let dough rise for 15-20min [if you have the time]

_ preheat oven to 180°C

_ bake until golden brown [about 35min]fox_zombie_bread3
