When I did my research on wild rose hips I found out that you can make a vanilla supplement out of the seeds. Actually most recipes using the wild rose flesh say – ‘don’t throw out the seeds – you can make vanilla sugar out of it’. But for some reason nobody actually seems to have tried it. So naturally I had to.
I have to say – the sugar tastes delicious! Nothing like vanilla :D – but really unique and special! I wouldn’t use it as as vanilla sugar supplement, but it’s definitely nice in teas and on desserts!
WILD ROSE SEED SUGAR
_ place same amount of seeds and sugar [1teaspoon seeds : 1 teaspoon sugar] into a coffee grinder
[I tried doing this in a mortar – didn’t really work. But you can probably use some other food processor]
_ grind until you have a fine powder
_ push through a fine meshed sieve
_ store in an air tight container
