Wild garlic season is over because they started to bloom? So not true!
Once wild garlic starts to flower the plant puts all energy into the flowers and therefore also the lovely taste. There are plenty of ways to make use of that.
Wild garlic flowers make for a great topping on salads, spreads and soups. Another way to leverage the intricate flowers is by flavouring vinegar. After three to four weeks of storage the vinegar has a distinct garlic-y taste.
WILD GARLIC FLOWER VINEGAR
_ wash flowers and pad dry
_ place in a sterile bottle
_ add wild garlic leaves and top up with vinegar
_ close tightly and keep for 3 to 4 weeks in a cool and darf spot before enjoying the vinegar
