WILD GARLIC CREAM SOUP

I love wild garlic. But I am very glad that there are nice people at the farmers market who decided for me that it’s actually wild garlic and not lily of the valley. Seriously, if they don’t flower there is just no difference.

 

WILD GARLIC CREAM SOUP

  • 50g wild garlic
  • 2 small onions
  • 1 small potato
  • 2 tablespoons vegetable stock
  • 750ml water
  • 100g sour cream
  • 1 tablespoon butter
  • pepper [to taste]

_ wash wild garlic and pad dry

_ cut onions and potatoes in small pieces

_ roast onions and potatoes gently in butter [until they got some color]

_ cut 1/3 of the wild garlic in small pieces

_ add to onions and potatoes

_ add water and vegetable stock – bring to boil

_ add rest of the wild garlic [simmer for 15min]

_ puree soup

_ add sour cream  and bring to boil

_ season with pepper

[if you want a more intense taste, use more wild garlic or add some chopped leaves before serving]
