WILD GARLIC BUTTER

Looking for a new way to flavor your steak or grilled vegetables? The combination of wild garlic and lemon gives this a creamy freshness. The butter is whisked up in no time and keeps for quite a while in the fridge or freezer. If you are doing this last minute before your BBQ guests arrive – make sure to give the butter at least 20 minutes in the freezer to firm up.

WILD GARLIC BUTTER

  • 450g butter [room temperature]
  • 100g wild garlic
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest [about 1 large lemon]
  • salt
  • black pepper

_ wash wild garlic and pad dry
_ remove stems and finely chop wild garlic [if you want it really fine – combine wild garlic with butter and use a food processor]
_ mix in lemon juice and zest
_ add salt and pepper [tasting as you go]
_ spoon the mixture into an airtight container [or form a little butter roll and wrap it with wax paper]

_ place in the fridge to firm up
_ keep in the fridge for up to a week [if you put it into the freezer it keeps for up to a month]

[use on grilled vegetables and meat or to pimp your bread]
