A while back my mother decided to make one of my truffle recipes with the neighbour kids. At the stage where they were allowed to roll giant balls of chocolate between their small hands they had the funnies expression on their faces. A sparkle of bliss in their eyes of having their hands covered in chocolate. Whilst sneaking skeptic looks at each other doubting that this could really be allowed. Waiting for the moment when they would be scolded for playing with chocolate. By the end the poor kids where completely stressed out. I think my mom will stick to healthy recipes from now on. I on the other hand feel very content sticking my hands into giant bowls of chocolate ;) Therefore here another truffle recipe!


  • 80g cream
  • 200g white chocolate
  • 100g chopped almonds
  • 50g ground almonds
  • 1 teaspoon Amaretto [or Liqueur 52]

_ chop chocolate and place in a bowl

_ heat cream and pour over chocolate

_ stir well until all chocolate is molten

_ stir in alcohol and chopped almonds

_ leave chocolate to cool down in the fridge [min. 3-4 hours]

_ use a teaspoon to pluck small small portions and roll into balls

_ roll them in ground almonds

_ store in the fridge
