Congratulation for choosing one odd flavour mix soup. Gutsy choice ;)
As much as I love this soup – and I really do – this is more of a special occasion starter rather than something to eat a giant bowl of. The flavour is compelling but gets a bit much in large quantities.
But hey – don’t give up on this before trying. You might end up missing out on your new, favourite dish.
SPINACH AVOCADO SOUP WITH MINT
_ finely dice onion
_ mince garlic
_ heat oil in a large pot and sauté onion and garlic
_ add spinach [stir regularly until spinach shrinks]
_ add stock and mint leaves
_ simmer for about 10 minutes
_ add avocado
_ puree soup with a blender
_ reheat and season to taste with salt and pepper
