Austria is preparing for summer. Temperatures are slowly rising. Fruit trees are in full bloom and people have stored away their winter coats. This weekend I should be lying in the grass getting my first tan. Instead I’m looking out the window and see a good 10cm of snow. It’s a full on snow storm and it’s supposed to go on like that for another couple of days.

Now I’m sitting here, huddled in a blanket, having the weirdest feeling that it should be christmas soon. So instead of making a summer fruit salad I chose to convert the fresh plums into a christmas spiced upside down cake.


  • 4-5 fresh plums
  • 1 ½ cups (190g) flour
  • 1 cup (200g)sugar
  • 1 cup (250ml) olive oil
  • 3 eggs
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon ground allspice
  • ½ teaspoon ground ginger powder
  • ½ teaspoon baking powder
  • pinch salt


_ preheat oven to 180°C

_ grease a cake pan

_ cut plums in half and remove pits

_ blend all dry ingredients

_ add oil and whisk by hand

_ add eggs and vanilla

_ beat well [should be a smooth, fairly thick batter]

_ pour half the batter into the cake pan

_ push the plum halves in a single layer into the batter [cut side up]

_ top up with the remaining batter

_ bake for about 50 minutes [until a toothpick inserted comes out clean]

_ allow the cake to cool for at least 15 minutes

_ flip over and decorate with powdered sugar
