I’m in desperate need of some color! With the dull weather lately the days are starting to blend together.
This delicious soup is quick and easy to make. Even on the most stressful of days you can squeeze this in. And the happy color will cheer you up instantly! It takes probably less than 20 minutes from taking the broccoli out of your fridge to hopping onto the sofa with a steaming cup of soup. More time to relaxe and treat your body to some healthy veggies!
SPEEDY BROCCOLI SOUP
_ cut the broccoli florets of the stem
_ bring the water to a boil
_ throw in the broccoli florets and cover with a lid
_ boil for 4 minutes [broccoli should be tender but remain it’s pretty green color]
_ strain [but keep the broth] and wash under cold water [to stop the boiling process]
_ roughly chop garlic [and onion] and fry in a little olive oil
_ toss broccoli and garlic [and onion] into a blender
_ add ¾ of the broth and puree until you get a soft, silky texture [you might need all the broth]
_ heat the broccoli cream and season to taste with salt, pepper and olive oil
_ add a few pieces mozzarella
_ serve sprinkled with almonds
