Merry Christmas guys! I hope you have a lovely day – no matter where you are or how you decide to spend it!
RUM RAISIN BALLS
_ roughly chop raisins
_ cover with rum and leave to soak for 4 hours
_ melt chocolate together with butter and leave to cool back down to room temperature
_ combine chocolate mixture with sugar, vanilla sugar, cocoa powder and raisins
_ mix until well combined
_ cover and leave to cool down in the fridge for about 1 hour
_ use a teaspoon to cut off small portions of chocolate mixture
_ form small balls and coat them with coconut flakes or chocolate rasps
[cookies keep well for about 2-3 weeks if stored air tight – ideally in the fridge]
