RED CURRANT JAM

Berry time!!! Finally the berries in the garden are starting to get some color. Yesterday I spend almost an hour gathering (and immediately eating) raspberries. Today was red current time! There are only so many red currants you can eat, so the rest ended up getting conserved.

This jam is sweet. If you want to use the jam for savory dishes use a 1to3 store bought jam mixture instead of sugar.

RED CURRANT JAM

  • red currants
  • sugar
  • water

_ rinse currants

_ place them in a large pot

_ cover bottom of the pot with water

_ cook until red currants are soft and wilted [stir frequently]

_ pass them through a food mill [discard seeds left behind]

_ weight the puree

_ for each gram add equivalent amount of sugar to the pot

_ mix well

_ cook over medium- high heat

_ once the mixture is at a rolling boil, let boil for 5min undisturbed

_ spoon the jam into clean jars

_ screw on the lids firmly

_ turn upside down

_ let cool
