RED CABBAGE – POMEGRANATE SALAD

I like raw red cabbage – I love pomegranate – so a red cabbage pomegranate salad sounded like a great idea. It is super fresh, super crunchy, super juicy and super yummy. Give the cabbage some time to make friends with the lemon juice – otherwise it will be a bit tough to chew. If you keep the salad in an air tight container it makes for a great salad to take to work or eat the next day. It will not get soggy or lose any flavor!

RED CABBAGE – POMEGRANATE SALAD

_ finely cut or grate cabbage

_ add salt and lemon juice [‘massage’ into the cabbage]

_ leave for 10 minutes to soften

_ peel and grate apple

_ mix in with the cabbage

_ squeeze juice out of half the pomegranate seeds

_ add remaining seeds and juice to the cabbage

_ season with oil, pepper and some more lemon juice

_ toss well and serve
