For weeks and weeks the outside world is only changing from gray to black and back again. Cold drizzle, hail, wind storm and pouring rain. Worst summer ever! This is badly falling back on my mood. So lets try to get a little bit of summer into my life with this fruity cream cheese bars. Raspberries are what I could get my hands on – any other kind of berry will do too.


  • 2 eggs
  • 0.75 cups sugar
  • 2 tablespoons butter [room temperature]
  • vanilla extract
  • 1 lemon [zest]
  • pinch salt
  • 1.5 cups flour
  • 1 teaspoon baking powder
  • 300g cream cheese
  • 0.5 cups sugar
  • 2 eggs
  • 2 tablespoons flour
  • vanilla extract
  • 1 lemon [juice]
  • raspberries [or blueberries]

_ grease a 23 x 30 cm baking pan with butter and flour

_ mix sugar and eggs until well blended

_ add first butter then flour, baking powder, salt, vanilla extract and lemon zest

_ pour mixture in the pan [batter will be hard to spread]

_ preheat oven to 180°C

_ in another bowl mix together cream cheese, sugar, eggs, flour, vanilla extract and lemon juice

_ pour mixture on top of the first layer of cake

_ sprinkle with berries [slightly press them into the batter]


_ bake for about 50 minutes

_ cool and refrigerate [covered] for a few hours

_ slice into bars and serve
