RAISIN POUND CAKE

Bored Sunday afternoon and you’re in the mood for baking? Or you have some last minute guests? Than this cake is perfect. No fancy ingredients – chances are high that you will have all this at home anyway! It’s a sweet and moist cake that goes great with some coffee!
Word of warning – the cake likes to dry out fast! So better store it in an air tight container – cover it with foil – or eat it immediately!

RAISIN POUND CAKE

  • 2 cups (250g) flour
  • 2 sticks (225g) butter [room temperature]
  • 1 cup (200g) sugar
  • 4 eggs [large]
  • 150g raisins
  • 1 teaspoon vanilla extract

_ mix flour and baking powder

_ rinse and drain raisins

_ mix with a tablespoon flour [this will keep them from sinking to the ground while baking]

_ butter a cake pan

_ preheat oven to 180°C [350°F]

_ beat butter with sugar until pale and fluffy

_ mix in vanilla and one egg at the time

_ add small portions of flour [if batter gets too dry – add a splash of milk]

_ carefully fold in the raisins

_ pour batter into the cake pan

_ bake for 60 to 80 minutes [check after 60 minutes to see if it gets too dark]

_ let cool in the pan

_ serve dusted with powdered sugar
