These pickled red onions make for a super nice and quick to make addition to any Mexican dinner. The colours look insane but that’s what happens if you keep it over night. Lovely colour dot on tacos!
QUICK PICKLED RED ONIONS
_cut onions into thin slices
_combine onions, lime juice, sugar and salt [make sure onions are completely covered]
_let sit for at least 2 hours [will turn nice and purple]
