POACHED APRICOTS WITH COCONUT YOGURT

Adding coconut syrup to your plain yoghurt is such a simple way to make it more interesting. Topped with fresh fruit or fruit cream it makes for a real treat.

 

POACHED APRICOTS WITH COCONUT YOGURT

  • 10 apricots
  • 2 tablespoons sugar 
  • 1 teaspoon lemon juice
  • pinch salt
  • 250g yogurt
  • 3 tablespoons coconut syrup

_ remove pits

_ heat them wit a little water in a saucepan

_ stir in sugar, lemon juice and salt

_ simmer vor 15 min [until apricots get super soft]

_ press through sieve [to get rid of the skin]

_ if peach sauce is to liquid, simmer until is has a more creamy texture

_ remove from heat

_ cool completely

[if you like you can add some apricot liqueur]

_ refrigerate [until it has the same temperature as the yogurt]

_ mix yogurt and coconut syrup until creamy

_ spoon yogurt into serving bowls

_ top with peach sauce
