PISTACHIO CHOCOLATE TRUFFLES

14th December!

Truffles, truffles, truffles – nobody should have ever told me that making truffles is so darn easy. And the varieties are just endless! Since I love dark chocolate – truffles are the perfect gift to give myself. If you are feeling generous you can make a small batch of different ones and wrap them as gifts.

 

PISTACHIO CHOCOLATE TRUFFLES

  • 200g dark chocolate [good quality]
  • 100ml cream
  • 150g pistachios [unsalted]

_ finely chop pistachios and chocolate

_ melt chocolate together with the cream [preferably in a water bath]

_ add about 100g of the pistachios

[I like to sieve the pistachios through a wider mashed sieve – that way the fine pistachio crumbs are in the chocolate and the bigger pieces stay behind for later]

_ let chocolate cool for 3 to 4 hours in the fridge [or over night]

_ scoop out small portions and form into balls

_ roll balls in the remaining chopped pistachios

_ store in an air tight container in the fridge [for up to 10 days]
